Summer is coming, and it's bringing fresh rhubarb!
Want to know a secret? Rhubarb pie is one of the only things I can actually bake.
I learned the recipe from my mother, and she learned it from my grandmother. Rhubarb pie is a bit of a tradition in our family, and I am so excited to share this special and simple recipe with you!
Grandmom's Rhubarb Pie
-4 Cups Chopped Rhubarb
-1 1/3 Cups White Sugar
-6 TBSP Flour
-1 TBSP Butter
-9 Inch Pie Pastry For Top + Bottom
1. Preheat oven to 450 F
2. Combine sugar and flour. Sprinkle 1/4 of it over the pastry in the pie plate. Heap the rhubarb over the mixture - do not mix! Sprinkle with remaining sugar and flour. Dot with small pieces of butter. Cover with top pie crust.
3. Place on lowest rack in oven. Bake 15 minutes and reduce temperature to 350 F. Bake 40-45 minutes more.
